Traditional drinks of Cantal

Let's start our meal with a welcome drink of gentian. Gentian alcohol is issued from a fresh and wild root, it is a local drink with a bitter taste.
Another local drink is named Birlou, with a taste more fruity of apple and chestnut, local fruits of the Châtaigneraie area.
For local beers you will meet brewers from Lafeuillade-en-Vézie (Mélodie des Bulles), Saint-Martin-Valmeroux (CratR) or Vic-sur-Cère (la Vicoise).
If you prefer soft drink, some syrups are artisanal. During your stay in Cantal, you can find local syrups on markets.
Traditional plates

Follow our meal with traditional dishes from Cantal. Take pleasure to taste stuffed cabbage which is cooked with cabbage and auge meat, or tje pounti, a salted dish made with plums. These typical food are excellent with a bit of truffade, you will enjoy the mix between potatoes and fresh tomme of Cantal.
It's time for tripoux, a typical dish made with small bundles of sheep tripen usually stuffed with sheep's feet, sweetbreads znd various herbs and garden vegetables. If you smile, you have to taste it, if you think it is weird... No worries, there is more attractive.
On local markets or in restaurants, you will try « bourriols », a typical pancake from Cantal made with buckwheat furnished with local cheese.
If you have a stay near Saint-Flour, you will notice their lentils. The blond lentils of Saint-Flour is cultivated thanks to the volcanic land and the basalt plateau.
Cheese!

Do you want some cheese ? Our favourite is Cantal of course, this cheese is made with cow milk. The traditional production has to respect specifications to be a Protected Designation of Origin (PDO). You can eat this cheese alone, but you can cook it for an entry, a main course or a dessert. The Salers is a cheese famous for tradition and history, only made with raw milk. The production is registered in the national inventory of intangible cultural heritage. For a choice between various cheese of Auvergne, we suggest Saint-Nectaire, a fourme d’Ambert and bleu d’Auvergne.
Desserts

We finish our meal with a sweet cake, the blueberry pie, or a traditional cheese pie with fresh tome of Cantal. The pachade, another typical dessert is a cripsy pancake sometimes plain, sometimes with apple or blueberry.
When you take your coffee, try some biscuits made in our villages which can be close to your holidays rent. For example, we can sample the Massiac macaroons with hazelnut taste, the "carrés of Salers", "cones of Murat" and crunchy of Auvergne.
