The galette des rois is an emblematic pastry in France, associated with the celebration of Epiphany, which takes place on January 6. However, galettes des rois are available in bakeries and patisseries throughout January, and even longer.
They are often eaten with a glass of cider, champagne or sparkling wine. Over the years, patissiers have innovated by offering variations on the galette, such as versions with frangipane cream, fruit, chocolate, etc., offering a wide variety of flavors to suit all tastes.
Galette Frangipane (Classic): This version is the most widespread and consists of two discs of puff pastry enclosing a frangipane filling, a mixture of almond cream and pastry cream. You'll find it all over France.

Galette Comtoise: In Franche-Comté, the galette des rois is made with choux pastry flavored with orange blossom, a local specialty.
Galette Corse: In Corsica, tradition dictates that the galette des rois is made with chestnuts, an emblematic ingredient of the island.
