After an initial career in development and management in the food industry at home and abroad, Laurent Deverlanges set up a sturgeon aqua farm to produce caviar.
The 20 hectare estate is at Neuvic on the River Isle, the Dordogne river where Aquitaine caviar production first began in the 1980s.
The Domaine follows the natural rhythm of the seasons and life of the sturgeon, demanding consistently high standards to produce caviar of truly excellent quality, inspired by nature.
At the heart of this peaceful landscape, the Estate Manager shows visitors around the ponds and explains the life cycle and story of the sturgeon which spend at least 7 years in the water before releasing their eggs.
Discover the precise, invaluable skills required to produce caviar, the best way to get ready for a tasting session !
Several options at different levels are available to discover caviar and all include a tour of the Estate : Discovery, Initiation, Master Class and the Culinary World of the Château.
Visits are available all year round by prior arrangement, also on the first Saturday of every month plus Tuesdays and Fridays in July and August.
The shop sells the full range of Estate products as well as original gifts and accessories.
The Estate tour is not advisable for visitors with reduced mobility.

Martine from the Gîtes de France office talks about her visit
«A wonderful tour accompanied by a guide with a great sense of humour who gave clear, interesting explanations. The highlight for me was catching the sturgeon with my bare hands wearing waders. The tasting session at the end of the tour was a great experience. You just need to like caviar ! »
