Tripoux Lozère

In the heart of the Lozère plateaus and valleys, the cuisine is generous and authentic. Tripoux, a typical dish of the Margeride region, embodies the culinary tradition of the department. Made from veal or mutton, rolled in the belly and simmered for a long time in a sauce flavored with white wine, onion and herbs, they offer a melt-in-the-mouth texture and a subtle taste. This rustic dish, once served on special occasions, remains a staple of mountain inns and country markets. Accompanied by steamed apples or Puy lentils, tripoux warms hearts and reminds us of the deep attachment Lozériens have to their land and traditions.

Another treasure of the region, the fario trout of the Lozère torrents symbolizes the freshness and purity of high-altitude landscapes. Caught in the crystal-clear rivers of the Truyère and Tarn, they can be enjoyed grilled, meunière or en papillote, seasoned with butter,garlic and wild parsley.
